W.Greg Nalley has launched what is being projected as a blossoming restaurant empire in the form of a farm to “point-and-pick” restaurant.

Nalley opened his first restaurant in 2011 in downtown Baltimore and recently opened his sixth on Pratt Street. Strong demand for the unique salads, bowls and wraps that the burgeoning chain offers has inspired plans for future expansion.

Nalley, a long-time chef, now has two additional Nalley Fresh restaurants under construction in Gaithersburg and Columbia, both of which are scheduled to open in 2015.

Next year he may open as many as five new locations.

When asked if he plans to expand nationwide, Nalley said, “Why not?”

It was, after all, the national chain Chipotle that was the inspiration for his successful chain.

“When I went to Chipotle for the first time I just fell in love with the simplicity of the point-and-pick system,” he said. “I also loved the lines they had. They had lines out the door.”

Nalley said his Nalley Fresh restaurants offer healthy food that accessible and affordable to the mass market. Customers can get a healthy, fresh meal for about $8, he said.

“The success of our innovation is demonstrated by having upwards of half-a-million customers since opening,” Nalley said.
