Hotelier tries to keep pace with guests’ sophistication

Jonathan M. Tisch has been thinking a lot about food. The chair of Loews Hotels says today's travelers have more sophisticated palates than they used to, and that the hotel industry is working to accommodate their tastes. "They have higher expectations, when they travel, about how they want to eat and what they want to eat," Tisch said Thursday at the Loews Annapolis Hotel, where he was on hand for the grand opening party of the hotel's new restaurant, BAROAK.
